Quick Cucumber and Tomato Salad

Ingredients
  • 2 large cucumbers
  • 1 large tomato
  • 1 tbsp olive oil
  • 2 tbsp pomegranate balsamic vinegar
Directions
  1. Slice or chop the cucumbers and tomatoes.
  2. Place the vegetables, oil and vinegar in a bowl with a tight fitting lid.
  3. Gently shake the bowl until well mixed.
