Quick Cucumber and Tomato Salad

- 2 large cucumbers
- 1 large tomato
- 1 tbsp olive oil
- 2 tbsp pomegranate balsamic vinegar
- Slice or chop the cucumbers and tomatoes.
- Place the vegetables, oil and vinegar in a bowl with a tight fitting lid.
- Gently shake the bowl until well mixed.
