IMG_7049 This is our go-to lunch. I think we have this at least twice a week. Like I’ve mentioned before, we have salads every other day for lunch, but on the days we don’t have salads, I’d say that probably every other time I have one of these. Besides peanut butter and jelly, this is definitely the most eaten sandwich in our house. It’s a super easy lunch to pack up for Joel to take to work and it’s great for my daughter and I for a quick lunch. IMG_7051

All you need is two slices of bread, peanut butter and fruit of some sort. My favorite thing I’ve had on this was those Apple Pears. I loved the taste of the pear inside it, but it still had that snap that apples have when you bite into them. Cut up grapes are really tasty too.

More common though is just to use apples. Here are some other ideas for the fruit filling for your sandwich though:

  • Apples
  • Pears
  • Strawberries
  • Berries of any kind
  • Cut up Grapes
  • Pineapple
  • Any kind of fruit!

Ingredients
  • 2 slices of bread
  • peanut butter
  • fruit of choice
Directions
  1. Throw your slices of bread into the toaster until it is the darkness of your liking (toasting is optional, we eat them toasted and non-toasted, depending on my mood). Slather each slice of bread with peanut butter, or any other nut butter you would like to substitute. Slice your fruit of choice and stack on top of the bread. Place the second piece of bread on top and it's ready to eat!

Here is a picture of my daughter’s sandwich when she was finally done with it. I always try to remind her to keep the sandwich together and not open it up and eat the insides out… but this time it looks like I wasn’t paying enough attention. ha
